Calories in olive oil, butter and cooking fats
Olive oil is 884 kcal per 100 g, butter 717 - about 124 and 100 per tablespoon. The USDA numbers, and why fat is the calorie people forget.
The short answer
Olive oil is 884 kcal per 100 g - about 124 kcal in a tablespoon - and every cooking oil lands within a few kcal of that, because they are all very nearly pure fat at 9 kcal per gram. Butter is 717 per 100 g, or 100 per tablespoon, because roughly a fifth of it is water. Fat is the densest thing in any kitchen and the easiest to leave out of a log, because most of it disappears into the food.
Nothing you can add to a plate moves its calorie count faster than fat. A tablespoon of olive oil carries more energy than a whole boiled potato, takes two seconds to pour, leaves no trace in the finished dish, and gets logged almost never. Two things stand out. The oils are effectively interchangeable: olive, coconut, sunflower, rapeseed, avocado oil — all land between about 880 and 900 kcal per 100 g. Choose between them for flavour, smoke point or fatty-acid profile, but not for calories, because there is nothing to choose. "Healthy" oil and "unhealthy" oil cost the same energy.
Butter is the outlier at 717, and the reason is not that butter is a lighter fat. It is that butter is only about 81% fat by weight — the rest is water and a little protein and sugar. Cream is further down the same scale at 340, because it is mostly water with fat suspended in it. The fat itself is always 9 kcal per gram. What changes between rows is how much of the product is something else.
Why fat is the one ingredient worth weighing
Most foods forgive a sloppy estimate. Guess a chicken breast at 150 g when it was 175 and you are 41 kcal out. Guess a potato 50 g heavy and you are 46 kcal out. Both are noise against a day's intake.
Fat does not forgive, because the error scales with a number seven to eleven times larger:

A free-pour from a bottle is commonly two to three tablespoons — nobody stops at 14 g by instinct. That single unlogged pour can be a tenth of a day's intake, and unlike the random error in a database row, it runs the same direction every time. Errors that never cancel are the ones that break a log over weeks.
How much of the oil actually ends up in the food
Here the honest answer is: it depends, and more than you would like.
Deep-fried food absorbs a substantial share of the oil it cooks in. Pan-frying leaves some behind in the pan, but how much depends on the pan, the heat, the food and whether you tipped the last of it onto the plate. Roasting vegetables tossed in oil keeps essentially all of it — there is nowhere for it to go. Dressing a salad keeps all of it too.
Because that fraction is genuinely unknowable from the kitchen, the workable rule is the conservative one: log what you poured, not what you guess ended up in the food. If you poured two tablespoons into the pan and served two portions, log one tablespoon per portion. You will occasionally overcount a shallow-fry by 30 or 40 kcal. That is a far smaller and far less biased error than the alternative, which is logging zero.
The invisible-fat checklist
The fats that break logs are rarely the ones you set out to eat. They are the ones that arrive inside something else:
- Oil the vegetables were tossed in before roasting
- Butter finished into a pan sauce or melted over steamed greens
- Mayonnaise inside a sandwich or a coleslaw, which is mostly oil by weight
- Cream in a soup that reads as a vegetable dish
- Oil in pesto, hummus and shop-bought dressings, where it is usually the first ingredient by weight
- The oil already in the pan from the last thing you cooked
None of these are visible in a photograph of the finished plate, which is exactly why a photo alone cannot price a meal.
