Energy comes from USDA nutrient 1008. Salt is calculated as sodium × 2.5, with unit conversion to grams. It is not a separately measured salt value.
Preparation
Raw cabbage is 25 kcal per 100 g, almost all water and fibre with 0.1 g of fat. Boiling adds nothing; fermenting into sauerkraut adds nothing either, since fermentation converts sugars rather than creating energy. What does change it is the treatment that usually follows: coleslaw is a mayonnaise dish with cabbage in it, and the mayonnaise is nearly all of the number.
Logging this food
A cup chopped is 89 g and 22 kcal, a cup shredded 70 g and 18. USDA's heads are the striking ones: a large head is 1,248 g and 312 kcal, a medium 908 g and 227, a small 714 g and 179 — an entire cabbage for less than a plate of pasta. A single large leaf is 33 g and 8 kcal.
Swaps and alternatives
Raw cauliflower is also 25 kcal per 100 g, spinach 23, broccoli 34. There is nothing to gain by swapping within this family. Where cabbage earns its place is as a swap for something else: shredded raw in place of a wrap or a bun, it removes a couple of hundred calories and adds bulk.
